Golden Sterlet - Almas
$119.00
Almas — meaning "diamond" in Persian — is the rarest caviar in the world. Ours comes from Albino Sterlet (Acipenser ruthenus), a fish so genetically uncommon that true albino specimens represent less than 1% of any sturgeon population. The absence of melanin produces pearls of natural gold — not dyed, not treated — just the roe exactly as nature made it.
At Caviar Luxe, our Almas is live-harvested and packed to order. What arrives in your tin is one of the most sought-after ingredients in fine dining, handled with the care that rarity demands.

- Appearance: Small-to-medium pearls — luminous gold to pale champagne, unlike any other caviar
- Aroma: Delicate and clean, with a faint floral quality rarely found in darker roes
- Palate: Exceptionally smooth and buttery, with a refined sweetness and zero harshness
- Finish: Soft and long — the kind of finish that makes you pause before reaching for another spoonful
